Mini cheesecakes with Raspberry Sauce

So this is what I'm making for dessert for christmas day..Thought I'd share the recipe :)

1 1/4 cups of graham wafer crumbs ( u can use oreo cookie too if you want or ginger cooker..i used the graham crumbs tho )
1/4 cup of melted butter
2 8 oz packages of cream cheese..use the regular package forget using the light one..thier"mini" lol
2 eggs
1 tsp cornstarch
1 can of pie filling..i used raspberry..but you can use any kind you like

1) preheat oven to 325 Line 12 cupcake tins( i also sprayed the liners with just a little bit of pam )
2) Mix together graham crumbs and melted butter
3)Divide crumb mixture evenly in cupcake tin. Bake for 5 mins
4)change over temp to 350
5)Blend cream cheese ( softened cream cheese ) sugar and cornstarch together..just until blended.
6) Stir in eggs. Beat on high for about 3 mins..or until smooth( fine lumps are ok )
7) divide mixture into cupcake tins Bake for 20-22 mins
8) Cool for 3 hours Refrigerate until ready to eat. I froze mine and will take them out a few hours before i'm ready to serve them.
9) Right before serving remove paper liners and spoon pie filling on each one.
Makes 12 mini cheesecakes

I thought this recipe was perfect cause after eating all the turkey and stuff..who wants to eat lots of desert. So i thought i know..make mini ones..that way it's just a few bites and not so filling.

Holy Crap that's alot of work, I thinik I'll stick with my method... Picking some up at the Bakery. But thanks for the recipe. ;)

hahaha...honestly...its not hard work at all...I have always dreaded making cheesecake cause I thought it was hard and alot of work...but yeah ok..it took a few hours..but it was really simple :)
( usually with Cheesecake i just go to the bakery too lol )

I love Cheesecake too much to try and make it myself. My favs are pineapple, cherry and strawberry. But I'll gladly take pain ole cheesecake any day of the week.

That sounds so good. Tiana makes this expresso swirl cheescake with chocolate wafer cookies as the bottom. Its the best cheescake I've ever had.
